Lizzie Vann’s Amazing Maple Pecan Cookies
1 cup butter
3 cups brown sugar (light or dark and light combined)
2 eggs
1 teaspoon maple extract
4 cups cake flour
1 teaspoon baking powder
1 cup chopped pecans
2/3 cup coconut
In mixer cream softened butter and add sugar.
Add eggs and maple flavoring.
Slowly add flour and baking powder.
When completely combined add pecans and coconut.
Hand roll into logs about 6 inches long and silver dollar size around. Wrap in wax paper.
The logs can be frozen for up to one year.
Makes between 6 and 9 logs depending on how large you make them. Each 6 inch log makes about 12-15 cookies.
To bake:
Preheat oven to 375. Do not thaw cookie logs. With sharp knife, cut ¼ inch slices. Place slices one inch apart on un-greased cookie sheet. Bake 8-10 minutes. Serve warm.
